Ramadan evenings take on a convivial, flavour-forward character at OPUS at Four Seasons Hotel Mumbai. The hotel’s Flavours of the Grill experience celebrates the generous spirit of iftar through a menu centred on expertly charred meats, vibrant marinades and bold seasonal spices.

The menu opens with a colourful selection of vegetable grills that highlight the depth of flame cooking. Think Chargrilled Harissa Celeriac, smoky grilled steaks paired with herb and artichoke aioli, and Duo of Tandoori Potatoes, crisp baby potatoes tossed with fragrant spices, mint chutney and fresh pomegranate. Dessert arrives in the form of Tropical Vanilla and Rum Grilled Pineapple, where caramelised fruit infused with vanilla and rum is served with coconut sorbet, a light yet indulgent finish to the evening.

The non vegetarian set menu opens with small plates such as Bhatti ki Kalmi, Ghost ki Galauti, Jhinga Nisha and Habibya Chaap before moving into aromatic mains including Murgh Laziz Handi, Ghost ki Nihari and Ghost Awadhi Biryani.

The vegetarian menu offers its own luxurious narrative, beginning with Kandhari Paneer Tikka, Sarson Broccoli and Nadru Subz Ki Sahammi. Mains such as Rahra Beet Paneer, Gucchi Matar Malai and Noor Mahel Biryani showcase layered flavours and delicate spice work.
