Chef Kayzad Sadri Brings Amadeo by Oberoi To Delhi for a Limited Pop-Up

If there’s one thing Delhi’s food connoisseurs absolutely love, it’s a good pop-up. And when it comes wearing The Oberoi’s stamp of luxury, you know it’s going to be more than just a meal. So when I got the chance to preview Amadeo by Oberoi’s Counter Collection at Threesixty, I grabbed my fork (and notebook) faster than you can say ‘lobster risotto’.

Born in Mumbai at the Nita Mukesh Ambani Cultural Centre, Amadeo has already been whispered about as the city’s best-kept secret. Now, for three nights only (September 4-7), it’s travelled to Delhi as part of The Oberoi, New Delhi’s 60th anniversary celebrations. The name itself, derived from the Latin Amadeus (“Love of God”), sets the tone for what’s clearly designed to be a divine dining experience.

And divine it was. The menu, curated by Executive Chef Kayzad Sadri, plays like a symphony across continents. It features Japanese precision, Italian warmth, Chinese subtlety, and Indian flair, all composed with a chef’s instinct for drama. Forget the predictable rhythm of starters-then-mains; the Counter Collection at Amadeo x Threesixty was anything but ordinary. Fluid, free-flowing, and full of surprises, every course felt like an unwrapped gift. And the thrill of not knowing what was coming next was the best part!

My lunch opened on a refreshing note with the Amadeo Good for You Green Salad- citrusy, crunchy, and bright with avocado, green apple, and edamame. Then came the Beetroot Involtini, rich and earthy, layered with cashew cream and smoked carrot purée (never thought I’d fall for carrot this way!).

From the Japanese counter, the Avocado Maki Roll was pure chef’s kiss, while the Chicken Carpaccio melted away delicately, lifted by avocado tartare and just the right whisper of wasabi. Over at the Chinese counter, things got interactive as we rolled up our sleeves to make our own bao. The fried fish version with coleslaw was a standout, while the mushroom bao for vegetarians held its own with bold, savory notes.

Of course, no Delhi menu feels complete without a local twist. The Avocado Chaat and Truffle Tadka Dahi Kebab, a playful twist with a superfood ingredient became the star of the show, and even chef’s personal favoruite from the menu.

For some sweet indulgences, the Chocolate Geode, with its decadent mousse and sorbet surprise, made me pause mid-bite just to admire its theatre. Meanwhile, the Mango and Coconut Tres Leches was a tropical encore, light and indulgent in equal measure.
