The Imperial Delhi’s ‘The Spice Route’ launches its all-new menu
Picture this: An enchanting South Asian culinary sanctuary nestled in the heart of the vibrant capital, offering a journey through the rich cultures spanning from East Asia to India, presenting a contemporary yet indulgent Asian dining experience like no other. Welcome to the Spice Route, Delhi’s one-stop destination for indulging in a gastronomic journey that’s all about cherishing South Asia and its authentic flavours and traditions. We recently attended a tasting preview of the restaurant’s newly-launched menu, and got a chance to take a stroll through the renovated interiors and decor of the traditional haven, and safe to say, it was screaming ‘grand’ in a hundred languages.
All about the new menu tasting
Immersed in a captivating fusion of art, design, and culture, ‘The Spice Route’s new menu stands as a testament to meticulous care and boundless creativity. Every dish is a testament of Asian aromas, offering a tantalising array of Vegetarian, Vegan, and Non-vegetarian delights. From meticulously hand-folded Thai Spring Rolls to tantalising Flaky Duck Handbags and Crispy Jackfruit paired with a luscious Vegetable Curry, each plate unfolds a captivating story, curated with passion by their Head Chef, Mastian. Our culinary journey began with a refreshing gin-based cocktail dubbed ‘The Journey of Life’. To kick things off, we delighted in the Fermented Black Bean Chilli Ragout, complemented by Sago Pearl and Rice Crackers that melted effortlessly in the mouth. Our palate was then treated to a selection of delicacies including Yellow Fin Tuna and Avo Tartare, Raw Sliced Yellow Tail, Smoked Duck and Cucumber Salad, and Hand Folded Thai Spring Roll, among others. The subsequent course featured South Asian highlights such as Gindara Miso Cod, Open Fire Thai Lamb Cutlet, and Maamisam Saalna served with fragrant Jasmine Rice. However, the star of the show was undoubtedly the unique and refreshing dessert, a platter of Rose Baked Yoghurt, Dadar Gulung, and a bowl of freshly cut fruits.
Diving into the restaurant’s unique architecture!
Not just for the exceptional food, ‘The Spice Route,’ is renowned for being an architectural design masterpiece. Hand-painted with vegetable and flower dyes, it stands as a testament to India’s cultural richness. The restaurant is divided into nine sections based on the Feng Shui principles and weaves the journey of life into its very fabric. From materialism to salvation, each section showcases antique treasures and murals dating back thousands of years. The Knowledge section features 16th-century temple pillars, symbolizing the Three Stages of Life: Artha, Kama, and Moksha. The mural showcases materialism and illustrations from the Kamasutra. Moving on, the ceiling represents Salvation, while the Help & Support section boasts an antique Kerala ceiling. The Creativity and Relationship areas follow, with opulent sections like Fate & Fortune and Wealth adorned with gold leafing. The Ancestral section marks life’s culmination, and the courtyard blends Thai and Kerala elements, celebrating food’s sacredness with an ancient Thai manuscript of the Ramayana.
At the end of the restaurant, an Asian sundowner bar and lounge awaits you, that has been adorned with traditional sculptures, forming the backdrop for star-lit evenings and sunny afternoons. Committed to sustainability, the restaurant uses local ingredients, and practices social responsibility in its daily operations.
Expressing his excitement about the newly renovated culinary haven, Mr. Louis Sailer, Senior Executive Vice President at The Imperial says, “Spice Route is an architectural marvel conceived by our visionary owners and the esteemed architect, Mr. Rajiv Sethi. The restaurant’s ambience is not only inviting but also timeless, boasting intricate designs that capture the spirit of ancient temples and captivating mural artistry, painstakingly crafted over seven years. Spice Route transcends being just a dining spot, it’s a destination in its own right – a sensory delight for all who enter. From the plush soft textiles to the carefully curated lighting, every element contributes to an atmosphere that encourages movement and conversation. Guests are invited to embark on an Ethnic Asian culinary journey, where every aspect of the dining experience, from décor to cuisine, is meticulously crafted. In essence, Spice Route offers a cohesive and memorable dining experience that appeals to a diverse audience.”
