When you think of summer fruits, watermelon is definitely one to pop into your mind. This summer, Monkey Bar heroes the fruit with a Watermelon and Feta Escabeche salad. Looking vibrant in presentation, the bright red colour instantly leaves you salivating.  Shredded mixed lettuce, lightly pickled watermelon, feta crumble, roasted pepper and coriander and mixed together and dressed in a basil dressing is topped with edamame beans.
“Watermelon is classically paired with feta because of the sweet and salty balance achieved when the two ingredients are used together. We’ve added an element of slightly pickled watermelon and roasted peppers for the smokiness, and then the edamame to add a lovely texture. The addition of coriander and basil brings everything together to make this a wonderfully refreshing summer salad,” said Sumit Choudhary, Executive Chef, Monkey Bar.
