“Watermelon is classically paired with feta because of the sweet and salty balance achieved when the two ingredients are used together. We’ve added an element of slightly pickled watermelon and roasted peppers for the smokiness, and then the edamame to add a lovely texture. The addition of coriander and basil brings everything together to make this a wonderfully refreshing summer salad,” said Sumit Choudhary, Executive Chef, Monkey Bar.
