In recent years, the world of cocktails has undergone a quiet revolution. Zero proof cocktails or alcohol-free drinks crafted with the same care, creativity, and complexity as their spirited counterparts, are redefining what it means to enjoy a night out or a casual gathering. Personally, I’d rather eat my calories in a tiramisu than drink them in a Negroni- which makes zero-proof cocktails the best of both worlds.
Gone are the days when choosing a sober drink meant compromising on taste or presentation. Today, mixologists are proving that you can hold a drink, sip mindfully, and experience the same layered flavours, aromatic complexity, and social satisfaction as a traditional cocktail- without the alcohol. Ingredients like fresh herbs, artisanal syrups, botanical infusions, and house-made bitters are making sober drinks more exciting than ever.
Interestingly, research shows that the global non-alcoholic beverage market is projected to grow significantly in the coming years, reflecting a shift in consumer preference toward health-conscious and mindful drinking (not letting them gym gains go to waste). Zero proof cocktails are not just a trend; they are a statement of choice, creativity, and sophistication.

Kalpaney: Imli ka Khajur

Inspired by the classic Indian Shikanji a summer staple in most Indian households reimagined with Tamarind-ginger extract, date molasses, green chilli, vegan foam, smoked Himalayan salt. Shaken over ice and garnished with vegan marshmallow. Avinash Kapoli, Founder of Kalpaney says- “Hospitality has always been about reading the room. KYMA- Bloom Lychee

Ingredients:
•60 ml Fresh Lychee juice / muddled lychee
•15 ml Fresh lime juice
•90 ml Tender coconut water (fizzy or sparkling coconut water if available)
•3–4 Rose petals (edible)
•Ice cubes
Method:
1.Muddle fresh lychee in a shaker.
2.Add lime juice, rose petals, and ice. Shake gently.
3.Strain into a tall glass filled with ice.
4.Top with tender coconut water (sparkling, if you want effervescence).
5.Stir lightly to combine.
Garnish: Edible rose petals + lychee on a cocktail pick.
Taste profile: Delicate, floral, subtly tropical like sipping a garden in full bloom.

Magna- Berry Hunt

Ingredients:
•6–8 Fresh blueberries
•1 Sprig fresh rosemary
•90 ml Apple juice (fresh pressed preferred)
•60–90 ml Soda water
•Ice cubes
Method:
1.In a shaker, muddle blueberries and rosemary.
2.Add apple juice and ice, shake gently.
3.Double strain into a highball glass with ice.
4.Top with chilled soda water.
5.Stir lightly to bring out the rosemary aroma.
Garnish: Fresh rosemary sprig + 2–3 blueberries.
Taste profile: Bright, refreshing, herbaceous with a fruity pop playful yet mindful.

Pankaj Chalak’s non-alcoholic Unvined Shiraz cocktail: 120ml Shiraz, 20ml strawberry syrup, 60ml orange juice, garnished with chopped apple – ₹550.

Method:
- Fill a shaker with ice.
- Pour in 120ml Unvined Shiraz, 20ml strawberry syrup, and 60ml orange juice.
- Shake well until chilled.
- Strain into a wine glass or stemmed glass over fresh ice.
- Garnish with freshly chopped apple on top.

Recipe:
Strawberry Puree : 30 ml
Blueberry Puree : 15 ml
Orange juice : 60 ml
Pineapple Juice : 60 ml
Method: Shaken
Garnish: Rosemary & Orange zest
Their head Mixologist Tanmay is of the opinion that, “A great cocktail doesn’t need alcohol : it needs balance, flavour, and a story. Berry Commune is our way of bringing people together over taste, not proof.”
