Perched atop the Sarvatobhadra, the Palace’s former private audience hall, the restaurant is a sensorial ode to Rajasthan’s living culinary legacy and opens its doors each season (September to April) to offer guests a deeply rooted yet forward-looking culinary experience under the stars.

Led by Chef Sonu Kumar Singh, The Sarvato’s menu is a tribute not only to regal Rajasthani feasts but also to the humble, soulful flavours that have sustained local communities for generations. Think slow-cooked delicacies over an open sigri, breads rolled lovingly by hand, time-honoured marinades, and a six-course tasting menu that flows like a cultural narrative. Here, royal court favourites meet rustic village recipes, served in a space that once hosted emperors and emissaries.
