‘A Diabetic Chef’ Harsh Kedia shares how to enjoy festive sweets without guilt

But for those with dietary restrictions, the festival can feel like navigating a sugar-laden obstacle course. Harsh Kedia knows this struggle intimately. Diagnosed with type 1.5 diabetes as a teenager, he’s spent years redefining what it means to enjoy festive treats without the guilt. With his latest venture, Conscious Mithaiwalla, Kedia is on a mission to ensure that no one—whether managing diabetes or simply trying to eat mindfully—has to sit out the sweet side of celebrations.
But Kedia’s story is much more than a business plan. At fourteen, a routine curiosity over a blood sugar test changed the course of his life, forcing him to make decisions that most teenagers wouldn’t dream of—cutting out sweets, skipping birthday cakes, and saying no to party treats. It wasn’t easy, but Kedia turned his frustrations into fuel, eventually launching *A Diabetic Chef* in 2020. His company, which offers sugar-free Belgian chocolates, spreads, and gummies, has grown rapidly, with products available in 150 stores and across 60 e-commerce platforms.
Now, as Diwali approaches, Kedia sits down to share the philosophy behind his culinary creations and offers practical tips for navigating festive indulgence with balance. From sourcing premium ingredients to crafting sweets that are both healthy and satisfying, he’s determined to prove that indulgence doesn’t have to come with compromise. The journey of Harsh Kedia is one woven with passion and purpose. At the age of 27, I embarked on a mission to redefine the dessert landscape for those managing diabetes. My venture, Conscious Mithaiwalla, was born out of a desire to blend culinary artistry with health consciousness, ensuring that indulgence is not a distant memory for those who must tread carefully with their dietary choices.

Diwali, a festival synonymous with joy and indulgence, often poses a dilemma for individuals with dietary restrictions. The key challenges include navigating a sea of sugary delights while feeling the weight of societal expectations. The allure of traditional sweets can be overwhelming, leaving many grappling with guilt and anxiety.
How do you personally maintain balance and avoid temptations during the holidays?
Personally, I embrace the philosophy of mindful indulgence. I savour the festivities while remaining cognizant of my health. I opt for moderation, allowing myself the occasional treat, yet balancing it with wholesome meals and maintaining an active lifestyle. It’s about crafting a harmonious relationship with food.
Tell me a little about how you create sweets that strike a balance between indulgence and health?
Creating sweets that straddle the fine line between indulgence and health is both an art and a science. I meticulously select ingredients that are not just palatable but also nutritionally beneficial. For instance, I replace refined sugars with natural sweeteners and infuse traditional recipes with superfoods, ensuring every bite is both delightful and nourishing.

Can you share some of your favourite diabetic-friendly or sugar-free sweets?
Among my favourites are the rose-based Kaju Katli sweetened with FOS and the Tiramisu APEDAvibrant made with coffee and a sprinkle of cocoa. Each creation tells a story of flavour and health, offering a guilt-free experience without compromising on taste.
What practical tips would you recommend to those trying to stay healthy during the festive season? How can they prepare in advance to ensure they don’t fall off the wagon with their health goals?
I suggest planning ahead. Prepare wholesome snacks to keep cravings at bay, and incorporate more fibre-rich foods into meals. Additionally, practicing portion control can empower individuals to indulge without overindulgence.
What are some effective ways people can manage their sugar intake while still enjoying festive treats?
Managing sugar intake while still relishing festive treats is certainly achievable. Opting for desserts made with alternative sweeteners, and portioning out indulgent items can allow for enjoyment without excessive sugar spikes. Mindful eating is key—truly savouring each bite can enhance satisfaction and reduce the urge to overindulge.

Are there any specific ingredients or recipes you suggest people incorporate into their festive meals?
I advocate for the incorporation of ingredients like almond flour, coconut, and natural sweeteners such as dates and stevia into festive meals. These not only add a delightful twist to traditional recipes but also enhance their nutritional profile, making them suitable for all.
Do you believe small indulgences help maintain balance, or is it better to stay strict throughout the celebrations? What kinds of approaches to diets work well and what are some common ones that are fated to fail?
I firmly believe in the power of small indulgences to maintain balance during celebrations. A rigid approach often leads to feelings of deprivation, which can trigger binge-eating. Sustainable diets are those that allow for flexibility, encouraging enjoyment while being mindful of overall health.

I am thrilled to unveil a new range of shippable pan India ready-to-eat healthy-sweets designed for the busy consumer. Additionally, we’re actively working on our next store in Mumbai. Also, I’m exploring collaborations with health and wellness influencers to expand our reach and empower more individuals to embrace healthier choices during festive seasons and beyond. The journey is just beginning!
