Renaissance Mumbai has conceptualised a grand brunch, inspired by the culinary journey along The Grand Trunk Road, one of Asia’s oldest and longest major roads, which has linked India to the rest of the Asian subcontinent for at least 2,500 years now.

The brunch, which will be delivered to your doorsteps, gives you a taste of foods from Afghanistan, Pakistan and, of course, India.

Kata-kat is a tender lamb and offals/soya chaap hand minced over a tawa using special spatulas, is famous in the dhabas of Lahore. Chaapli Kebab is a Mughal-influenced flat minced patties from the Pashtun cuisines of Kabul. Then there are Karachi boti kebab, Sindhi Shammi Murgh Dhabewaali daal and more.

Vegeterians can enjoy the veg variants prepared with old cooking techniques and cookware such as sigri, a flat, cast-iron stove, which is heated with charcoal. The kebabs are cooked on flat metal skewers over a handle. Other food is prepared in handi, deep-mouthed vessel made of clay or bronze, lagaan, a thick-walled copper vessel used specially to retain extra heat for slow cooking of meats and spices.
