Michelin star chef Gary Foulkes enthralls Indian diners

Romano’s, the Italian restaurant at JW Marriott Mumbai Sahar, served a special five-course meal, last Thursday, which was prepared by Michelin star chef Gary Foulkes. He is the Executive Chef at Angler Restaurant, London and is in India on All Things Nice’s invitation for a two-city tour—Delhi and Mumbai.
“We are on a mission to create an honest and top-end wine and food experience for our patrons in India. We started working on bringing Gary to India over eight months ago. He is such a talent and we wanted to showcase his food here,” says Sommelier Nikhil Agarwal, CEO, All Things Nice; who has partnered with JW Marriott Mumbai Sahar and Modi Motors for this event.
For this special meal, Foulkes, who is among the most sought-after chefs in the UK, has tried to use as many local ingredients as possible. “However, to maintain my style of cooking, a few tweaks have been made, but most of it is pretty close to how I cook back at Angler in London,” says Foulkes.

Chilled Avocado Gazpacho, Cured Kingfish, Buratta, Lobster, Roasted Cauliflower, Rack of Lamb and Creamed Polenta are few of the dishes that were served at this special ticketed dinner. The British chef calls these dishes an eclectic mix, inspired by the many places that he has travelled to.
