INDY by Qla is a tribute to India’s rich culinary heritage. Founded by Ranjan Chopra, the restaurant celebrates India’s diverse food traditions by reviving long-lost recipes and bringing them to the table. Head Chef Manish Kumar and his team have journeyed across regions like Punjab, Amritsar, and Jammu and Kashmir to capture authentic flavors, which are then woven into the menu. The carefully curated dishes reflect Indian street food, royal feasts, and home-style cooking, embodying the essence of each region. For instance, the Lamb Shank takes inspiration from traditional nalli nihari but adds an Assamese twist with fermented chili and eggplant for a smoky, rich texture, while the Nadru Galouti melds Awadhi galouti kebab textures with Kashmir’s lotus stem for a hearty vegetarian dish.
