Mumbai’s Culinary Map Travels From Shanghai to South India in Season-Fresh Menus

As Mumbai ushers in the season of indulgence, its culinary map is being redrawn — one menu at a time. This November, five restaurants unveil distinct dining stories that celebrate memory, craft, and imagination. From Trèsind’s reimagined modern Indian artistry and Yauatcha’s ode to old Shanghai, to Hitchki’s cinematic nostalgia and Devangere Benne’s butter-laced heritage, here’s what’s new on the city’s most discerning tables.

An Ode to Old Shanghai at Yauatcha

Yauatcha introduces Night in Shanghai, a culinary journey that resurrects the city’s 1930s dining culture — defined by quiet sophistication and culinary precision. Launching on November 1, 2025, the menu celebrates familiar recipes reinterpreted through elegance.

Dishes like Aam Chun Shui Mai (quail egg and chicken), Cha Hu Kok (crispy chicken char siu taro puff), and Tung Po Yuk (braised pork belly with spring onion bao) echo the balance and texture of Shanghai’s golden age. Vegetarian offerings such as Lo Han Zai (stewed bean curd knots with broccoli) and Yang Cao Chow Fan (fried rice with vegetable char siu) embody refined simplicity, while Chi Ma Chou (sesame praline ball) and Phou King Tan Thak (Portuguese egg tart) bring a sweet close to this nostalgic narrative.

Trèsind Mumbai, the iconic modern Indian restaurant that redefined India’s fine dining landscape, returns with an all-new menu and reimagined interiors. Guided by Chef Sarfaraz Ahmed and Chef Himanshu Saini, the refreshed experience embodies Trèsind’s vision — to take diners on a culinary journey through India, progressive through modernist artistry.

Each course is a celebration of innovation and nostalgia, inspired by regional traditions and elevated through global techniques, all presented with Trèsind’s signature flair. Rooted in the philosophy of Atithi Devo Bhava — “The Guest is God” — the menu reflects a deep reverence for hospitality, where every dish is crafted as an offering of warmth and gratitude. Culinary highlights include Gushtaba & Parmesan Yakhni, a delicate ode to Kashmir’s culinary heritage; Rajma Nihari with Arbi ki Galouti, a bold reinterpretation of Indian comfort classics; Coastal Lobster, chargrilled and paired with tomato-shellfish curry; and Pazham Pori with Hazelnut & Dark Chocolate Ice Cream, Trèsind’s refined nod to Kerala’s banana fritters.

Hitchki

Mumbai’s quirkiest resto-bar returns with a new script — bold, playful, and unapologetically filmi. Hitchki’s new menu blends desi nostalgia and global flavour in dishes like Tandoori Momos, Burger-e-Qutub Minar, and Miso Paneer Crispy Bao, paired with inventive cocktails such as Tharra Tonic and Pineapple Express.

“At Hitchki, we evolve while staying rooted in the nostalgia that defines us,” says CEO Aji Nair. “This new menu is a celebration of creativity, vibrancy, and connection.” Because at Hitchki, it’s never just dinner — it’s a full-on Bollywood party on your plate.

Devangere Benne

Devangere Benne brings the soul of Karnataka’s beloved benne dosa to Mumbai, crafted with ingredients sourced directly from its namesake hometown. Led by Chef Khushal, the menu spans classics like Benne Masala Dosa, Kadi Patta Cashew Idli, and Stuffed Medu Vada, paired with artisanal filter coffee and regional beverages.

The interiors — all brass, terracotta, and natural warmth — evoke Karnataka’s cultural intimacy. Founder Mahesh Shetty, who has shaped several of Mumbai’s dining landmarks, describes the venture as “a restaurant built on the joy of making people feel at home.”

Ode presents The Sandwich Edit by Chef Rahul Akerkar

A good sandwich doesn’t need theatrics, and Ode’s new delivery-only menu, The Sandwich Edit, created by Chef Rahul Akerkar with Aditya Birla New Age Hospitality, leans into that truth with the clarity Ode is known for. Built on great ingredients and clean structure, every sandwich follows a simple rhythm: bread, fat, protein, acid, texture, green. The result is food that’s comforting without being heavy and familiar without being predictable. The Grilled Mushroom Ciabatta brings roasted mushrooms, pesto, whipped feta, enoki tempura, and pommes Anna in a balanced, quietly rich build, while the Avocado–Stracciatella Sourdough stays bright with grilled avocado, roasted tomatoes, kalamata tapenade, and seed granola. Vegetarian options like the Black Rice and Bean Burger and the Falafel Pita stay hearty and satisfying, and the meatier picks go classic with care — the Cubano pressed with mustard butter, dill pickles, roast ham, Gruyère, and cranberry–chilli jam, the Smashed Double Buff Cheeseburger layered with molten cheeses and bacon-onion jam, and staples like the Salmon with a Schmear Bagel, Tuna Salad on Rye, and Buffalo Chicken Burrito. Everything is designed to travel well and hold its form from first bite to last. The Sandwich Edit is now available for delivery from Ode, Worli.
